A high-end Lagos restaurant, pioneering innovative Asian-Nigerian cuisine, where bold West African flavours meet refined Asian techniques, is seeking a Bar Manager responsible for the complete operation and financial performance of the bar. This includes curating an exceptional beverage menu, leading the bar team, managing inventory with precision, and delivering world-class service. About the Role
Develop, design, and constantly innovate the cocktail, wine, spirits, and non-alcoholic beverage menus.
Create unique, on-brand cocktails that complement the restaurant's culinary philosophy.
Source high-quality and rare ingredients, building relationships with premium suppliers and distributors.
Conduct regular training for all FOH staff on wine knowledge, cocktail ingredients, and sales techniques.
Manage the daily operations of the bar, ensuring seamless and efficient service during all hours of operation.
Maintain the highest standards of cleanliness, organisation, and set-up behind the bar.
Lead by example, providing exceptional customer service and engaging with guests to ensure satisfaction.
Resolve any customer complaints related to the bar in a prompt and professional manner.
Work closely with the Bookkeeper and General Manager to manage the bar's budget, pricing, and profitability.
Control costs and manage inventory with meticulous accuracy through regular stock takes.
Minimise waste and shrinkage through strict operational procedures and training.
Recruit, train, schedule, and motivate a team of bartenders and barbacks.
Set clear performance expectations and conduct regular performance reviews.
Requirements
About You
You are certified from a recognised sommelier or mixology institution (e.g., HBS, WSET, etc).
You have a minimum of 5 years of experience in a high-volume, high-end bar or restaurant, with at least 2 years in a leadership role..
You have expert knowledge of mixology, wine, spirits, brewing, and non-alcoholic beverages.
You have a proven financial acumen with experience managing inventory, COGS, and bar profitability.
You have strong organisational skills and the ability to work under pressure in a fast-paced environment.
You have impeccable personal presentation and professional communication skills.
