Our client is a prestigious 5-star luxury hotel in Nigeria. Due to expansion, they are in need of a Griller .
Location : Lagos
Job Responsibilities :
- Receive, inspect, and properly store meat, poultry, and seafood deliveries in line with hotel and safety standards.
- Cut, trim, debone, and portion meats according to menu specifications, recipes, and guest requirements.
- Ensure accurate portion control to minimize waste and maintain cost efficiency.
- Maintain the highest standards of hygiene, food safety, and sanitation in all butchery operations.
- Monitor stock levels of meat and seafood, ensuring timely requisitions and avoiding shortages.
- Collaborate with chefs to prepare specialty cuts and meet menu demands (banquets, à la carte, buffet).
- Properly label, date, and rotate all products to ensure freshness and compliance with food safety standards.
- Maintain and sanitize knives, tools, and equipment, ensuring safe and efficient use.
- Support culinary innovation by preparing specialty cuts for gourmet and international dishes.
Job Requirements :
Bachelor’s degree or equivalent qualification in Culinary Arts, Catering, or related field.Proven experience as a butcher in a 4 / 5-star hotel or fine-dining environment.Strong knowledge of meat and seafood varieties, cuts, and preparation techniques.
